Doyle, a 2009 graduate of Bishop McDevitt High School in Wyncote, grew up behind the Glenside Fire Company in Cheltenham Township. He said he came up with the idea for a dumpling shop during spring break of his senior year at Penn State.
That summer, the trio started testing recipes in his mom’s kitchen. By the fall, they were booking farmer’s markets.
“We knew we had something, we just didn’t know how to get it out there,” he said. “It was a long process to figure out what we wanted to do.”
The operation has come a long way from its start in the Doyle family’s kitchen. In 2024, the restaurant at 277 N Keswick Avenue had a 10-year celebration which coincided with their 10 millionth dumpling.
“It was pretty cool that number lined up with our tenth year. We did about 100,000 our first year, all made by hand. Now have specialized machines that can produce hourly what we would produce by hand in an entire day. The automation came at a good time,” Doyle said.



“We feel really fortunate. Glensides success has allowed us to branch out and take some risks, including opening a second restaurant too soon, touring the festival circuit, and countless popups in the city,” he said. “Since Covid our growth has come via mobile vending. There are currently four carts and one truck hanging the Humpty’s shingle.”
A sixth mobile cart is on its way this spring in the Bethlehem/Easton area. Doyle and company are also now the proprietors of a warehouse in Sharon Hill near the Philadelphia airport.
“It’s been working well, and the product has been well received everywhere we’ve gone. The warehouse has allowed to produce more than we could at the restaurant,” he said. “We’re positioning ourselves to be vertically integrated to control every aspect of the product as we grow which is uncommon these days
but ensures quality. Our numbers may have increased but we are still making everything from scratch.

“We’ve been lucky to have a really good team and we’ve tried really hard to maintain good relationships with local colleges and breweries. We’re looking for opportunity wherever we can,” Doyle said.
Those relationships are paying off. In November 2025, TastingTable named Humpty’s Dumplings the best food truck in Pennsylvania. From their article:

“I didn’t think I’d be in food or business, and here I am in both of them,” Doyle said.
