No More Potassium Bromate: Glenside Pizza Switches to a Healthier Pizza Flour

Glenside Pizza, located in Keswick Village, has made the change to a new unbleached and unbromated flour for their pizza dough. This process was tested for over one month in order to best replicate their previous dough of 24 years. The pizzeria opened in 2001 and has developed into a popular local pizza joint in the heart of Keswick Village. 

“It’s something I’ve been pondering for a while now. I knew the change had to be made, but needed to make sure the new pizza style matched what the customers knew,” owner Bill Zonios said. “Potassium bromate has a bad reputation as a possible carcinogen and it’s been banned basically all over the world. There’s a reason cancer runs rampant in our country and ingredients like this are one of them.”

Potassium Bromate is now banned in Canada, Brazil, Argentina, China, India, the UK and the entire European Union among others. The only state in the US banning it is California. 

“I hope more food establishments will make a change as well. It’s important we look out for one another, not just our pockets,” Zonios said.
