Burb Cooks: Macaroni and Cheese for your Summr BBQ!

In this edition of Burb Cooks, Chef Doug of Duke’s BBQ in Norristown shows us how to make the perfect side dish for your Summer BBQ: Macaroni and Cheese!

Macaroni and Cheese
(for a bunch)

Prep Time: 15 Minutes
Cook Time: 90 Minutes

INGREDIENTS

  • 1 pound of Trio Italiano pasta
  • 1 pound sharp cheddar cheese
  • 1 pound mild cheddar cheese
  • 2 cups milk
  • 1 cup heavy cream
  • 3 eggs
  • 3 tbsp olive oil
  • salt and black pepper
PREPARATION
  1.  

    Fill a large pot halfway with water. Add 3 tbsp of olive oil and pinch of salt. Bring the pot to a boil and cook 1 pound of Trio Italiano pasta (or the pasta of your choosing). Follow the instructions on the box for cooking times.  When cooked, strain pasta and bring to a mixing bowl.

    Mix three eggs in a bowl. Add in 2 cups of milk and stir.  Pour mixture over cooked pasta noodles.

  3. Pour 1 cup of heavy cream over the pasta.  Season with 1 pinch of salt and 2 pinches of black pepper.

  4. Add in 1 pound of sharp cheddar cheese and 1 pound of mild cheddar cheese.

  5. Spray a baking pan thoroughly with non stick spray.  Bring pasta mixture into the pan.  Top of with extra sharp and mild cheese.

  6. Cover with foil and bake for 1 hour at 350 degrees Fahrenheit.

    After an hour, remove the foil and bake for 25 more minutes.

  8. Serve and Enjoy!
